A new coffee shop coming to Redwood Falls next year won’t let you come inside. It isn’t some temporary health or safety regulation; it’s part of the design of Ziggi’s Coffee, a drive-through-focused coffee chain slated for 321 East Bridge Street, on the corner of North Lincoln Street.
If you haven’t ever heard of Ziggi’s, that’s not much of a surprise. What started 21 years ago as a family-owned coffee shop in Longmont, Colorado, has grown to a sprawling franchise with 123 locations in 23 states. The couple responsible for bringing Ziggi’s to Minnesota are Ashlee and Joseph Edman, parents of three children and residents of Granite Falls. Joseph represents the fifth generation of his family to live in the city. The couple also owns Edman Builders, a commercial construction company in Granite Falls that is responsible for building the Ziggi’s locations. In April 2025, the Edmans opened their first franchise in Granite Falls—a drive-through-focused location—while their Montevideo location opened November 4. This location is connected to a bank and features a café model that includes indoor seating.
The upcoming third location will be much like their Granite Falls spot: drive-through and outdoor walk-up only. Cars will enter and exit from Lincoln Street, using the drive-through and bypass lanes that circle the building. Parking will be available for customers who want to order through a separate walk-up window on the north side of the coffee shop. Outdoor seating will also be available for customers on foot.

By focusing on drive-through and walk-up service, Ashlee says Ziggi’s can “provide exceptional products and service in a short period of time.” She hopes the coffee shop can "complement other businesses in town" by embracing a fast-casual concept for customers on the go. Customers will be able to choose from traditional hot and cold coffee shop staples, plus dirty sodas and sparkling sodas, blended dairy drinks, fruit-based beverages, energy drinks, teas, and smoothies, as well as featured seasonal drinks. Additionally, they will serve food for any time of day, from sandwiches and burritos to oatmeal and baked goods. A number of gluten-free options will be available, too.
The Edmans have aspirations of expanding their Ziggi’s footprint throughout Minnesota. Ashlee said they are very excited to be coming to Redwood Falls, choosing the city because “Redwood Falls seemed like a great fit!” She added, “We love to be involved in the community and look forward to being a part of Redwood Falls!” They plan to have a fundraiser for a local cause in their first week.
Ashlee says they intend to open the Redwood Falls location at the beginning of June 2026. Their hours should closely mirror their other locations: weekdays 6 a.m. to 7 p.m. and weekends 7 a.m. to 7 p.m. They expect to hire approximately 15-25 local employees.
